Superfood Chocolate Zucchini Bread

Ingredients
1 1/2 cups (360g) shredded raw zucchini

1 cup (130g) Grainless Superfood Flour

1/2 cup (45g) unsweetened cocoa powder

3/4 tsp. baking soda

1/4 tsp baking powder

1/4 tsp. salt

1/4 tsp. ground cinnamon

3/4 cup (180g) semi-sweet chocolate chips

2 large eggs

1/2 cup (120g) vegetable or canola oil

1/2 cup (100g) granulated white sugar

1/2 cup (105g) firmly packed light brown sugar

1 tsp. vanilla extract

HEAT: Pre-heat oven to 350 degrees F. Grease a 9 x 5 x 3-inch glass or aluminum loaf pan.

MIX: Grate zucchini; set aside. In large bowl, whisk Superfood Flour, cocoa powder, baking soda, baking powder, salt, cinnamon. Fold in chocolate chips. In another large bowl, mix together eggs, oil, sugars, vanilla. Fold in grated zucchini. Add wet ingredients to dry and mix until combined.

BAKE: Pour batter into pan and bake until bread has risen and toothpick inserted in center comes out clean, about 55-65 minutes. Place on wire rack to cool, about 10 minutes. Remove bread from pan and cool completely. Store at room temperature for several days or freeze.
