Gluten Free Spinach and Feta Quiche

Contains Dairy and Soy. Gluten Free, Nut Free, Corn Free.

Recip yields one 9-inch quiche

Ingredients:

  • 180g (3/4 cup) milk

  • 180g (3/4 cup) heavy cream

  • 113g (2 X-Large) eggs

  • 57g egg yolks (approx 3 egg yolks)

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 85g (3 oz) crumbled feta cheese

  • 30g spinach (1 cup) and 35g chopped onions (3/4 cup), sauteed

  • 1 recipe of pie dough 

Roll out the chilled pie dough: On a floured work surface, roll out chilled dough until you have a circle 12 inches in diameter. Carefully place the dough into a 9-inch pie dish. Tuck it in with your fingers, making sure it is completely smooth. Fold the excess dough back over the edge and use your hands to mold the edge into a rim around the pie. Crimp the edges with a fork or use your fingers to flute the edges.

Heat: Pre-Heat oven to 350 F.

Mix all together in the food processor, milk, heavy cream , eggs, egg yolks, salt and pepper.

Bake: Place spinach/ onion and crumbled feta cheese to line the base of the pie crust. Pour the liquid filling on top. Bake for about 45 minutes until the filling is set and the edges of the pie are brown.
