Pa Neal’s Green Chile and Cheese Scones
Ingredients:
200 grams London Blend Flour
60 grams sugar
7 grams salt
15 grams baking powder
115 grams (1 stick) cold unsalted butter cut into small pieces and blend lightly with the other set ingredients
66 grams green chilies diced small
125 grams English Cheddar cheese
75 grams milk
1 large egg
Directions: Mix together and blend into dry ingredients. Stop mixer when everything comes together…DO NOT OVERMIX.
Use round Scoop. Scoop to 2-2.5 ozs of batter onto lined sheet pan. Top with shredded cheddar cheese. Bake on 375 degrees for 20-22 minutes.
