Orly's Gluten Free White Chocolate Macadamia Nut Cookies

Makes 3 dozen large cookies

3 cups London Blend
1 teaspoon baking soda
3/4 teaspoon salt
1 cup butter
3/4 cup white granulated sugar
1 cup firmly packed brown sugar
2 large eggs (room temperature) lightly beaten
1 tablespoon vanilla extract pure
1.5 cups. white chocolate chunks 
1 cup chopped macadamia nuts

Preheat oven to 350 degrees F.  Prepare 3 trays and cover with non stick baking paper.   Cream together the butter and brown and white sugar.  Then gradually add eggs and vanilla.  Mix together the flour, baking soda, and salt in a separate bowl.    Add the dry ingredients to the wet ingredients and mix until fully incorporated.  Add the chocolate chunks and macadamia nuts and mix through.  Use a small ice cream scoop or spoon and batch 12 cookies on each tray.   Bake cookies on middle tray for 11-12 minutes.
