If you love chocolate this are your go to cookie!! They are super rich and chocolatey but also light and fluffy so you can eat more than one. They are also perfectly chewy (I love chewy cookies!) I recommend eating with a glass of dairy free milk!
Vegan Gluten Free Chocolate Chip Cookies
Recipe makes 24 cookies
Ingredients:
2 1/4 cups Blends by Orly London Blend
1/2 cup unsweetened dutch cocoa
1 tsp baking soda
1/2 tsp salt
1 1/4 cup granulated sugar
1 cup vegan butter (like Smart Balance)
2 tsp pure vanilla extract
1 tbsp molasses
1/4 cup non-dairy milk (like almond milk, soy milk or macadamia milk)
1 cup vegan chocolate chips
Heat: Pre-heat the oven to 350°F. Line two baking sheets with parchment paper.
Mix: Sift together London Blend, cocoa, salt, baking soda and set aside. In a separate bowl cream together vegan butter until smooth and fluffy. Then add sugar, vanilla, and molasses and beat until fluffy. Gradually add in non-dairy milk while mixing and continue beating until well combined. Add your wet ingredients to the dry ingredients and mix well. Stir in chocolate chips.
Use a tablespoon to scoop up dough and roll it into a ball, then flatten the cookie slightly with your hand onto baking sheets.
Bake for 10 minutes one sheet at a time on the middle rack.
