Chocolate Chip Pizookie?  YES PLEASE! This extraordinary cookie combines of all of my favorite dessert qualities in one skillet!  The pizookie is a super easy to make dessert can be whipped up in a jiffy.  In its most literal form, it is a giant cookie with a soft and gooey center.  You will LOVE pizookies if you are a fan of under-baked desserts like I am (molten chocolate cake is my ALL TIME FAVORITE).   My recipe is a simple chocolate chip, but feel free to add any additional fillings like chopped nuts, white chocolate chips etc.  Or use your own favorite cookie recipe to make a pizookie!  Ideally served straight out of the oven, top with your favorite flavor of ice cream. My favorite is when the ice cream melts right into the hot pizookie!   It's like a mini orgasm!  

Warm & Gooey Gluten Free Deep Dish Chocolate Chip Pizza-Cookie ("Pizookie")

Recipe Makes 2x 8-inch Pizookies
10.5 tbsp (150 grams) butter
Just under 1 cup (170 grams) white granulated sugar
1.5 cups (220 grams) tightly packed light brown sugar
2 large eggs
3 tsp vanilla (12g)
2 1/3 cups (350 grams) Blends by Orly London Blend
½  tsp salt
3 ½ tsp baking powder (12g)
½  tsp baking soda
1 ¾ cup (225 grams) dark chocolate chips

Heat: Preheat oven to 375º F.  Spray the bottom and sides of a 8-inch round springform pan with non-stick oil 

Mix: In the bowl of a stand mixer with paddle attachment, cream the butter and sugars together on medium-high speed for 3 minutes until lightened in color.  Add eggs + vanilla and mix for 2 minutes or until fully incorporated. In a separate bowl, mix together Blends by Orly London Blend, salt, baking powder, and baking soda.  Add the dry ingredients to the mixing bowl and mix all ingredients together on med-high speed for 3 minutes, or until fully incorporated.  Add chocolate chips and mix for 30 seconds or until dispersed within the dough

Bake:  Using a spatula or your hands, transfer the cookie dough into the pan.  The dough will be sticky so I use a piece of parchment paper to push the dough to the edge of the pan.  Spread it out evenly so that it fills the pan about 3/4 of the way.  Bake the Pizookie for 10 -12 minutes or until lightly golden brown around the edges but a bit under baked in the center.  Top with vanilla ice cream and drizzle with caramel or chocolate syrup. My favorite is when the vanilla ice cream melts right into the hot pizookie!
