Gluten Free Tropical Bliss Pineapple Coconut Banana Bread

Recipe Yields 10 slices


1/2 cup butter, softened
1 cup sugar
2 eggs
1/2 cup ripe banana, mashed
7 ounces (little over a 1/2 cup) of drained crushed pineapple
1/2 cup flaked sweetened coconut
2 cups Blends by Orly Sydney Blend
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Baking Instructions

In a bowl, cream butter and sugar, then beat in eggs until incorporated.  Stir in mashed banana, crushed pineapple and coconut.  Combine dry ingredients into the creamed mixture and stir until combined.  Transfer and bake at 350-f degrees into a greased 8-in. x 4-in. loaf pan for 65-70 minutes or 9-in. x 4-in. loaf pan for 60-65 minutes or until bread test done.  Cool in pan 10 minutes; remove to a wire rack.
