Gluten Free Vegan Healthy Coconut-Peach Cobbler

Gluten Free Peach Cobbler

6 ripe peaches, peeled and cut into chunks
2 Tbsp coconut sugar
1 Tbsp ground flaxseed meal
tsp vanilla extract
2/3 cups Sydney Blend
2/3 cups gluten free oats
1/2 cup brown sugar
1 tsp ginger
1/2 tsp cinnamon
1/4 tsp himalyan salt
1/3 cup cold coconut oil

Heat: Preheat your oven to 375º F.  Grease a 9" square or round glass baking dish. 

Mix: In a large bowl, combine the peaches, coconut sugar, flaxseed meal and vanilla.  Mix together to coat the peaches and transfer to the baking dish.  In another bowl, mix together the Sydney Blend, oats, brown sugar, ginger, cinnamon and salt.  After the dry ingredients are evenly mixed together, use your hands to rub the cold coconut oil into the mix to coat, until the mixture resembles course bread crumbs.  Evenly layer on top of the peach mixture

Bake: For 30 minutes, or until the top is a slightly golden hue and the peach mixture is bubbling.  Serve alone or with coconut ice cream!
