Gluten Free Chocolate Chip Mandel Bread (Mandelbrodt)
 

A good friend of my mom's makes this chocolate chip mandel bread recipe.  I liked it so much that I decided to try making it gluten free with Blends by Orly London Blend.  The only change that I made is that I added the salt, just to bring out the flavor a little more.  These mandel bread are perfect with an afternoon cup of tea.  You can add slivered almonds to the chocolate chips if you fancy.  The recipe is super quick and easy!

Yields 16 slices
1 cup oil
1 cup sugar
3 cups Blends by Orly London Blend
3 eggs
1 Tbsp baking powder
1/4 tsp salt
1 Tbsp vanilla
1/2 bag chocolate chips

Heat: Pre-Heat the oven to 325 degrees F.  

Mix: In the bowl of a stand mixer with the paddle attachment, mix together the oil, sugar, eggs and vanilla until combined.  Then add the London Blend, salt and baking powder, and mix on medium speed until all ingredients are incorporated.  Add a half a bag of dark chocolate chips and mix for another 30 seconds to disperse chips within the dough.

Shape: Divide the dough in half and form two loaves with your hands.  Place each loaf on a separate cookie sheet, covered with parchment paper.

Bake: the loaves for 35 minutes.  Remove from the oven and slice and separate the pieces.  Then bake for another 10 minutes, or until you reach desired crunchiness.  
Store for up to 1 week in a tupperware container.
