The most common gluten free recipes that customers request from me are bread recipes.  I think most people on a gluten free diet, when asked what they miss the most, would be a good piece of bread!  This recipe makes fantastic toast, grilled cheese, and sandwich bread.  Unlike most daunting bread recipes, this one is a very easy recipe and only takes 10 minutes to make the dough.  You can feel healthy eating it because it is filled with ingredients that have fiber and protein.  You'll be amazed at how soft and moist it is and feel like you're eating REAL bread again!

Orly's Fiber Protein Health Bread

Vegan - Nut Free - Gluten Free

375ml lukewarm water
35g olive oil
100g honey (or molasses if vegan)
450g Blends by Orly Tuscany Blend
11g baking powder
35g pumpkin seeds, chopped or whole
20g psyllium husk
10g chia seeds
1 1/2 teaspoons salt
2 1/2 teaspoons / 7g/ 1 packet instant yeast

Instructions

In the bowl of a stand mixer with the paddle attachment, start by covering yeast with 300ml of warm water and let sit for 5 minutes. Combine all of the ingredients, and mix them until you have a smooth and sticky dough. 

Empty the dough into a lightly greased 8 1/2" x 4 1/2" bread pan and smooth out the top of the dough with the back of a spatula. Cover the pan with lightly greased plastic wrap or a wet towel.  Set your oven to warming mode or about 100 degrees F and allow it to rise in the warm temperature for about 45 minutes-1 hour, until it's crowned about 1" to 2" over the rim of the pan.

Toward the end of the rising time, preheat the oven to 350°F.

Bake the bread for 35 to 40 minutes, or until the top of your bread is crusty.  Let the bread cool and slice it.

Bread will keep on the counter for 3 days. Freeze for up to 6 months.
