Gluten Free Fast and Easy Homemade Pancakes
This recipe for gluten free pancakes made with Sydney Blend is fast, simple and you usually have all the ingredients at home. If you want to dazzle up your plate, create your fave flavored pancakes! Just add bananas, berries or chocolate chips to the batter in this recipe. Garnish your pancakes with maple syrup, cut up fruits, berries and nuts. The best part is you'll never have to use a boxed pancake mix again!
Recipe yields 9 small pancakes
1 cup Blends by Orly Sydney Blend
2 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
1 large egg
3/4 cup plus 2 tablespoons milk
2 tablespoons unsalted butter, melted
Whipped butter for cooking
Combine the Sydney Blend, baking powder, sugar and salt in a bowl and mix together. Beat the egg and milk in a bowl. In a different bowl, add the milk to the melted butter and whisk together to blend. Pour the milk mixture into the dry ingredients and stir together, gently folding the batter until you have a smooth batter. Don't worry if you have a few small lumps.
Heat a nonstick pan over medium heat and coat it with whipped butter (or vegetable oil). Drop the batter from a ladel or measuring cup (about 1/4 cup) and cook on medium heat until the first side is golden brown, or until the top surface bubbles. Check the bottom of your pancake after 1 minute. Flip with a spatula and cook until the other side is golden brown. Adjust the heat setting if necessary. Add more whipped butter to the pan if necessary between batches. Serve immediately with maple syrup or powdered sugar.
Optional: Add 1/2 cup of blueberries to the batter for delicious blueberry pancakes.
