Hanukkah Blue and White Cookies
Recipe yields 30 cookies
Cookie Ingredients:
3.5 cups London Blend
1.5 tsp baking powder
1/2 tsp baking soda
2 eggs
2 cups sugar
4 tsp vanilla
1/3 cups sour cream plus 1 Tbsp
1 1/4 cups butter
Preparation:
Cream the butter and sugar. Little by little add the eggs. Mix all the dry ingredients together .
Add the sour cream and mix for 2 minutes.
Add the dry ingredients.
Using an ice cream scoop with a lever, scoop evenly sized scoops of batter onto a baking sheet covered with parchment paper. Allow space between each cookie. Use your hands to flatten out the tops of the cookie balls. Bake at 350F for 15 minutes.
White Icing Ingredients:
1 and 1⁄4 cups confectioners sugar
2 tbsp of milk
1 1/2 tsp vanilla
1/2 tsp salt
Blue Icing Ingredients:
1 and 1⁄4 cups confectioners sugar
2 tbsp of milk
1 1/2 tsp vanilla
1/2 tsp salt
2 drops blue food coloring
Mix icing ingredients together with paddle attachment in the stand mixer. After the cookies have time to cool down, ice half of the cookies with the vanilla icing and set aside to dry. After the vanilla icing has dried, ice other half of the cookies with the blue icing.
