Babka Bread Pudding
Bread Pudding Batter
960g whole milk
170g sugar
340g eggs
64g egg yolks
2.5g salt
2.5g vanilla paste
1g cinnamon
1 recipe Chocolate Babka, diced into chunks
Mix all the ingredients in a blender until the sugar dissolves.
Place babka chunks into a casserole dish or pan
Pour mixture over tha babka and let it sit for 2 hours in refrigerator, covered.
Bake in a tray in a water bath at 350f , for 50 minutes.
Let cold down in refrigerator for 6 hours and portion it.
Warm it in a saute pan with some brown butter until get a gold crust in both sides.
Whipped crème fraiche
300g heavy cream
150g crème fraiche
2 tbsp sugar
1 tsp vanilla paste
1g salt
Whip the heavy cream with the sugar and salt,until medium soft peeks form.
Incorporate the crème fraiche to the heavy cream . Refrigerate it until ready to serve.
