Gluten Free Chocolate Chip Peanut Butter Cup Cookies

An amazing dessert blog that I follow called Flour Me With Love wrote a review on baking with Blends by Orly Gluten Free Flour.  The recipe that they tested London Blend with is INSANE!  This recipe is a beautiful creation, as it is a mixture of my FAVORITE ingredients- chocolate, peanut butter AND peanut butter cups!  After taking a bite into one of these, it's like I died and went to heaven.   Just don't expect to have any self control with these cookies around the house.  

Ingredients:
3/4 C sugar
3/4 C brown sugar
3/4 C creamy peanut butter
2 eggs
1/2 C butter, softened
1 tsp. vanilla
2 1/4 C Blends by Orly London Blend
1/3 C cocoa
1 tsp. salt
1 tsp. baking soda
16 full-sized peanut butter cups
3/4 C chocolate chips  

Heat: Preheat oven to 350 degrees; grease two cookie sheets.

Mix: Cut each peanut butter cup into eight pieces and set aside.  In the bowl of  your stand mixer with the paddle attachment or by hand, cream together the sugars, peanut butter, eggs, butter, and vanilla.  In a separate bowl, mix in the Blends by Orly London Blend, cocoa, salt, and baking soda.  Add this to the wet ingredients and mix together on medium speed until all ingredients are incorporated.  Stir in the chocolate chips.  Carefully fold in the peanut butter cups.

Bake:  Using a spoon or a melon baller, scoop out the cookie dough, about 12 to a sheet.  Bake for 10-11 minutes.  These cookies taste best when not over-baked.
